No-Nonsense Eggnog

December 4-December 10 What better way to begin the holidays than with a nice glass of eggnog? Hungry Girl has a variety of eggnog recipes to choose from that are healthier than the hearty stuff. Posted this at work the first full week of December.

Dress warm...

It was REALLY cold on Tuesday. So cold that it was in the teens when I left for work at 8am and I don't think the high was above 30 degrees that day. Since I sit next to the window, I dressed warm. This week American Eagle has all their sweaters on sale for 40% off. I might need to go and stock up for the rest of winter.

Tried another color from the Deck Your Nails set, A Sparkle Yule Love. This looks like it is just a red glitter top coat, but it ended up looking like a pink glitter nail. It is really similar to Excuse Moi from the OPI Muppet's collection.

Another try at something that I saw on Pinterest. This actually comes from 2 things that I pinned. One was a wall hanging with this quote and the other was a method of creating the wall hanging. It seems like an easy method. The pin links you to the Diddle Dumpling blog. I printed the quote at work because I didn't have ink in our printer. Since the ink was pretty dry by the time I got home that night, the ink wouldn't transfer. I ended up having to trace over the saying with a black washable marker before transferring and then colored it in with permanent marker. It was okay for my first try, but I definitely want to keep trying to create more. 

Eat, Love, Pray

I just finished- just this morning- reading Eat, Love, Pray by Elizabeth Gilbert. You may have heard of a movie that came out a few years ago by the same name starring Julia Roberts. This is the book the movie was based on. Now, I'm not going to write a review or book report trying to talk you into reading this book. The copy I have been reading is my mom's. She gave it to me to read because she wasn't able to get into it. The more I pushed myself to read further into the book, the more interesting it became. I really enjoyed the writing style of the book, as if a friend was telling her about her exploration. There was also an honesty to the book that I appreciated, especially crucial to some of the stories she tells. After a couple of years, of on and off reading, I have finally finished this book and am looking forward to start another book. One more thing off my onto the next.

Can't Waste a Good Outfit

It's the weekend. YAY! This morning we has to take the animals to the vet for their annual shots. It was chilly outside so I threw on my boots and a necklace with my new sweater and we were out the door. I got home and notices that I really liked my quick outfit. Unfortunately I didn't have any other plans but cleaning my house. (It had been neglected since I started working Fridays again.) I had to make sure that I got a picture of my ensemble and post it so that I didn't waste a perfectly good outfit, just like a saying I pinned on Pinterest.

I love Groupon! This past weekend they had a deal for Old Navy. Purchase the Groupon for $10 that is worth $20. What makes it even better is that I had a $10 Groupon credit from a Groupon that was purchased through one of my referrals (thanks mom!). I basically got $20 to spend at Old Navy for FREE! The items above are what I bought with my cost only being $12. (Got to love their deal this week, BOGO 75% off!) I also got a cute travel mug too while I was there. (Pic below.) I'll try and post some pics of me wearing my finds soon.

I'm not a Black Friday shopper. I just happen to shop that day. One place I usually go is Ulta. They have good deals, not on gifts, but for stuff I want. This year they had liters of Catwalk Oatmeal & Honey shampoo and conditioner for $6.99 each. They also had a OPI nail polish set called Deck Your Nails. Only tries one so far, but I am loving the black tinted silver glitter of How's It Snowing'? I mixed it below with Just a Little Dangerous from Sephora by OPI. Having one nail different from the rest is one of my favorite nail trends.

Workout Catch Up

I realized that I haven't posted my workouts for the past week...
Wednesday I tried out the new Tone It Up workout that was in my email. Check it out here Such a good wake up call. That night was Jazzercise before the big food day.
Thursday...who works out on Thanksgiving? Nearly 100 Jazzercise.students. Up early for am 8am class to burn major calories before the big feast.
Friday's workout was shopping, my exercise of choice! (I'll be posting the deals I got that day.)
No workout Saturday, but Sunday I spent a couple of hours with Shane trying to beat each other at everything on the Wii.
Monday: Nice morning run with Jazzercise that night.
Tuesday: Quick run...not a lot of time.
Wednesday: pilates with a good stretch and Jazzercise as usual.
Thursday, well I wanted a break.
Today: Tone It Up's SHREDmill workout for 20 minutes.

Beach Ball Workout

This morning I did the Beach Ball Workout from the Tone It Up Bikini Challenge that I tried to do earlier this year. It was killer, but the more I could feel the burn in my muscles, the more drive I had to do it. All while watching Moulin Rouge with Nicole Kidman and Ewan McGregor. (one of my fave movies) All I needed was an exercise ball, hand weights and some space. Sitting at work today, my muscles are already feeling it. I also tweeted about the workout this morning. Check it out Tone It Up's Blog and print out the printable workout. Had Subway for lunch today and rewarded myself with a White Chip Macadamia Nut cookie. Yum! At least I kept myself from getting more than one cookie.......

Jeans Week @ Work

I like the holidays at work....we usually get permission to wear jeans more and have more time off. This week to celebrate the short week (I only have to work 3 days because of Thanksgiving and taking Friday off) we were offered a $10 jeans pass for the week. This money goes to funding office activities we have. How could I pass up this chance? I love to wear jeans! In my own celebration, I went to Old Navy on Sunday and got 2 tops for $11 total! This was my outfit today.....
This outfit felt like fall! Especially when I put on my coat and walked out the door....25 more outfits to go.....

The Rainbow Connection

I was a little excited when I saw The Muppet collection from OPI. Then I saw it on Pinterest. I figured that I should use a color as the base just in case the glitter didn't go on in thick coats. Let's just say it was a good idea. Are We There Yet? from the Touring American collection was the color I chose because it blends with the glitter...and matches the outfit I want to wear to work tomorrow.

 After 2 coats of Rainbow Connection, I was glad that I did a base coat. I didn't realize that I would need to put on 2 more after this.

I like it! We'll see what the reaction is tomorrow when someone other than my family sees it.

Recap of my weekend....nothing on Friday night but chillin. Saturday night was Twilight Girls' Night. A bunch of us got together and saw Twilight Breaking Dawn. I love a good love story and thought Bella looked nearly gorgeous at the beginning of the movie! (Which is a lot to say for Kristen Stewart) I will warn you that there are some cheesy moments (including the creepy imprinting scene) as well as a scene that had my friend Brooke in tear because she was laughing SO hard (when the werewolves are talking to each other through their thoughts.) Fun weekend with fun people! I even got a chance to make Skinnytaste's Crock Pot Chicken Taco Chili again for our pre-Twilight potluck.

Last night while watching Glee......

....I happened to notice an outfit that the coach of the Treble-tones was wearing. Shelby, as portrayed by Idina Menzel (love her!), was wearing are great fall outfit. Maroon shawl cardi layered over a matching color tank, belted with a brown belt. This was all paired with brown skirt and boots. I liked it so much that below is my version I wore today:

I bought the ring at the Family Christmas Gift Show this past weekend from a lady that made them. The Tiffany & Co. necklace was my 25th birthday present. Want to talk about my savvy shopping? My sweater was bought at Costco, pants and the D.I.! My shoes weren't even scuffed on the bottom, so they may have been brand new. And because I can't get rid of anything for fear of not having it to wear in the future, my tank has never been worn, but I have had it for about 5 years and my belt was bought because at some time I needed a black belt.
There we go! Number 2 outfit! Only 26 to go!

Apple Pie Substitute

Okay, this isn't really a replacement for apple pie since it is, well, apple pie. I found this recipe from Hungry Girl and posted it at work for the recipe of the week. You can find it here....

And I just have to say I am really excited for dinner tomorrow. I know it sounds lame, but I am making a roast in the Crock Pot. Its one of my favorite Fall meals. I really like the left over veggies that have soaked up all the juices.....Mmmm!

Read my nails!

Another one bites the dust! Last night while I was watching the Harry Potter marathon on ABC Family, I decided that I should make good use of my time. My nails have been neglected from being painted lately, causing them to break and get shorter. There was a really cool nail design idea that I saw on Pinterest, where else?, and set forth to try it. Here's what you need:

1. Paint your nails a solid color. Lighter is better so that the black ink on the newsprint will show up. Let your nails dry completely before moving on to step 2.
2. Pour enough liquid into a bowl that you can dip your fingernail into. The site I found suggested that you use vodka, but you can use rubbing alcohol if you don't have any spirits sitting around your house. (For those of you concerned, less than a half a shot of vodka was wasted in the process. It will be okay!)
3. Dip your nail into the liquid, making sure it is covered completely. Remove and place a newspaper strip on your nail. I also dabbed a little vodka on top of the newspaper to make sure that the nail was wet.
4. Hold the strip onto the nail for a couple of seconds and slowly peel off your nail. If you leave it for too long, the newspaper may stick to your nails. Also, make sure that you don't move it around too much or it will smudge and smear.
5. Once you are finished with all your nails, apply a top coat and you are set! (I used Essie's Matte About You top coat for a flat color look.)

These boots were made for walkin'.....

....not for sitting in my closet to look at every so often. I have been wanting to get some tall boots since last winter, but as I am VERY picky, it has not been easy. Finally I have found some, so I got them and they have been sitting in my closet ever since. I kept thinking about wearing them, but could never get myself to. Then Halloween came around and I decided to dress as a cowgirl for Halloween....enter the boots. The just perfected the costume. Last night I was reviewing my 28 list and decided that I would post an outfit and hairstyle today.

One Potato, Two Potato.....

Another one for the list....this week I posted a recipe on the board at work for Skinnytaste's Baked Potato Soup. (click on the link to get to the recipe) This week is going to be a cold one, so soup is a must at least once this week. Shane and I were really lazy on Sunday from all the fun we had on Friday and Saturday, so grocery shopping was out of the picture. I have some things that I want to make that I thought about yesterday. This week I want to make apple chips and last night I made pumpkin chocolate chip cookies, only because I had the stuff at home to make them.
Also, update on another list item, during a roadtrip we took this weekend (went to Vegas for SEMA), I was able to knock out 75 pages of Eat, Love, Pray. I pretty much read the whole entire way home. The story definitely gets better the farther you read into the book.
My friend Brooke let me know this weekend that she needs a motivator for her weight loss. We were watching "I Used To Be Fat" on MTV Thursday and she had this great idea that we need to do that. That said, I am now on the look out for giant 100-page easel paper pads. Just wanted to make sure that I got that quick update in. Oh.....I also was finally able to get back to Jazzercise after about 3 weeks without going.  :)

Mummy Cupcakes

Happy Halloween! We had our annual Halloween party with friends at Korri and Nick's house this past Saturday. Tons of fun was had! I decided to make a treat keeping with the current holiday. This recipe was featured on and with the success I had on the Pumpkin cupcakes, I figure that these were worth a try. There is a recipe for the vanilla frosting to use on the cupcakes, but I had some store bought frosting and piped that through a ziplock bag. They were a hit and I look forward to making the chocolate cupcakes again. There are 2 things that I like about the past 2 cupcake recipes 1) simple, easy to follow HEALTHIER recipes and 2) cheap! Mark 2 more off the list for 8 and 10 as I have this recipe on Pinterest and it was a new recipe to me.

Super Moist Low Fat Chocolate CupcakesGina's Weight Watcher Recipes
Servings: 24 • Serving Size: 1 cupcake • Old Points: 2 pts • Points+: 2 pts
Calories: 93.8 • Fat: 2.3 g • Protein: 1.1 g • Carb: 17.5 g • Fiber: 1.4 g • Sugar: 9.9
Sodium: 281.8


  • 18.25 oz Duncan Hines Dark Chocolate Fudge cake mix
  • 1.4 oz sugar free, fat free, instant chocolate pudding
  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 1 1/3 cups water
Preheat oven to 350°. Line a cupcake tin with cupcake liners.
Combine pumpkin puree and water in a large bowl; mix to combine. Add chocolate pudding mix and mix well.
Add chocolate cake mix and beat 2 minutes.
Fill cupcake liners 2/3 full and bake about 25 - 28 minutes, or until a toothpick inserted comes out clean. Cool in pan on wire rack for 15 minutes.
Makes 24.

Halloween Chili Cook-Off

Every year at work on Halloween we have a chili cook-off. This year is the first year that I have been asked to make chili for my team. It was up against other chilis judged by the local West Valley Fire Department. I found a recipe for a crock pot chicken taco chili to test out on the lucky judges. The reviews were good on

Gina's Weight Watcher RecipesServings: 10 Size: 1 1/4 cups Old Points: 3 pts Points+: 5 pts
Calories: 203.7 • Fat: 1.4 gCarb: 33.3 g • Fiber: 10.0 g Protein: 16.9 g


  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • chili peppers, chopped (optional)
  • 1/4 cup chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

This was the end result. Everyone at work loved it! I didn't win the contest though. I made it overnight....chili is not a good smell for early in the morning. Shane called me to let me know that he thought it smelled really good. I may have to make this at home. Perfect for a cold day! I also posted the recipe on the Wellness board.

Pumpkin Spice Cupcakes

Found this recipe on The picture that I found on Pinterest that led me to this recipe looked WAY good. Since Halloween is around the corner and everyone likes pumpkin for fall, I posted this recipe on the Wellness board at work. By the way, I have been asked to be the chairperson for the Wellness Committee in my office. I made these for Shane after telling him about the recipe and hearing excitement in his voice. The verdict between Shane, our friend Jessen and myself were as follows: "Too much pumpkin together. Cupcakes are good, but the frosting is a little too pumpkiny. Much better with vanilla frosting."-Shane (I only frosted half of the cupcakes with pumpkin spice frosting because we both felt that the pumpkin spice frosting was not right for these cupcakes.) "The cake is good, and the frosting is good, but would be better separately. The frosting would be good on a chocolate cupcake."-Jessen
I thought that the frosting had a lot of cream cheese taste to it, but I really like the cupcakes. Below is the recipe and a link to the site. This counts for my list too! I have tagged this post for numbers 8, 10 and 19.
Pumpkin Cupcakes (no frosting)

  • 18.25 oz Betty Crocker Golden Vanilla Super Moist Cake Mix*
  • 2 tsp pumpkin pie spice
  • 1 cup canned 100% pure pumpkin
  • 1 cup water
For the Pumpkin Cream Cheese Frosting:

  • 8 oz Philadelphia 1/3 fat cream cheese (do not use fat free)
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 5 tbsp packed brown sugar

Preheat oven to 350°. Line a cupcake tin with cupcake wrappers.
Combine cake mix and pumpkin spice in a large bowl. Add pumpkin puree and water, mix about 2 minutes.
Fill cupcake liners 2/3 full and bake about 20 - 25 minutes, or until a toothpick inserted comes out clean.
For the frosting, combine the cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice and brown sugar until smooth. You can use a spatula to ice the cupcakes or pipe them which may require making more frosting.
Makes 24

*Betty Crocker has reduced their cake mixes, so read the labels on your box. Dunkin Hines still carries 18.25 oz boxes.

Be Healthy!

I am in love with Pinterest! In fact, that’s where I have been getting all the inspirational pics and quotes that have been at the top of my blog posts. I started following SkinnyTaste on Facebook awhile back and saw a status recently that said that they were now on Pinterest. Gina, the girl behind SkinnyTaste, has posted pics and links to some of her great recipes on there. They look delish and I can’t wait to try some of them! It’s always nice to have a picture of the food you want to make. Now every time I get on Pinterest, I see these amazing, healthy foods and it inspires me to want to eat healthier. SkinnyTaste is also on Twitter, so I started following there to get more recipes and ideas. Being as happy as I was that she was on Pinterest, I tweeted “@Skinnytaste on @Pinterest? I may have died and gone to heaven!” Not long after, Gina from SkinnyTaste replied back “oh, I’m glad that made your day!” You can find more of her recipes and ideas at When I start trying some the recipes she has posted, I will make sure that I post my review here and share the REALLY good ones with you. Bananas=BAD!!!! Coconut water=YUM!!!!

Okay, I got a really bad Charley Horse on Saturday night that left my calf sore for two days, so I decided to stop at Harmon’s on the way home to get some coconut water to replenish my electrolytes and help increase my potassium. Eating bananas is a great way to get your potassium, but I HATE them. Because of the low intake on that, I usually get Charley Horses if I am a)dehydrated or b)need potassium. I found that Harmon’s had Zico Coconut Water on sale and I bought their Pomberry and Tao Mango flavors. Katrina and Karena from Tone It Up are always talking about coconut water, so I was really excited to try it. Can I just say that the Pomberry (pomegranate and berry) was amazing!?!? Zico is on Twitter and I have begun following them. To praise their product, “I have fallen in love! 4 some1 who HATES bananas, its gr8 2 have found a YuMmY product w/so much potassium! Thx @ZICO!” They added my tweet to their Favorite Tweets! So excited!

I'm all for doing it the right way!

New video from Tone It Up came in my email yesterday and was posted on Twitter and Facebook! Yay! I need to get a foam roller to use for exercise, but it looks like it will feel amazing. I’ve never used a foam roller, but have read that they are used for stretching out your muscles while massaging them. Just to get the word out about the new workout on my blog, I retweeted it. Response from Tone It Up: “Thanks so much for RT our workout today! J xxo @smashleylb” I really need to do it. After Jazzercise on Monday night, Saved By The Bell kettlebell workout and a 20-min elliptical run Tuesday night, pilates Wednesday morning and Jazzercise again, it may be like eating ice cream. I am working for it! Oh boy, can I feel that I am working for it! My legs felt like jello after Jazzercise on Monday night, but the universe must have been feeling my vibes that I was ready for a new start and that I needed to motivation to get through the sore times.

As I mentioned in my last post, I have a Twitter account and invite anyone with a Twitter account to follow me. I have added a widget to my blog so that all my tweets and retweets can be read. Before Jazzercise on Monday, I was chillin’ in my car, waiting for my mom to get there and class to start, so I tweeted “Double dose of workouts today. @JazzerciseInc class with my mom after work! @ToneItUp #fallchallenge check in”

To my surprise, my tweet had been retweeted by Jazzercise telling me “You Rock!” That was an awesome feeling to know that my tweet was read and retweeted to show others the great work I was doing! After that, it felt like I had a constant roll of feedback coming to me. Not only did Jazzercise give me encouragement, but nearly every tweet after that got me some type of response. I will be posting my excitement about those in future posts related to each. I even started being followed by another girl that is using Tone It Up and is on their diet plan. I have found Twitter to be a great motivation to me, especially when I am struggling with what is or isn’t happening.

Motivation Monday

Mondays with Tone It Up are Motivation Mondays.
After my post yesterday about feeling the way I do, I had extra motivation for my morning workout. I ran on my elliptical for 20 minutes, which I realize isn't much, but I sweat as much as I do during an hour-long Jazzercise class. I also had every intention of weighing myself this morning and posting it here to take accountability for my actions, but I didn't remember until after I ate my breakfast. I tweeted this morning to help motivate myself and to thank Tone It Up for helping me wiht y motivation: "My first hurdle was getting used to waking up & working out early every morning. 3 steps forward, 5 steps back

I really don't know if I should say anything at this point. The picure pretty much says it all. I haven't regretted one exercise or a single morning waking up to work out. However, because of the increased energy and feeling that I was entitled to eat because I did it, I regret EVERY cookie I have ate. That stops now! No one else can do it for me, I have to do it for myself and myself alone. I know I can do it! Come on, I wear Nikes, I should "Just Do It"! That's all for today. The end. 28 years!

I started thinking this morning about my age. I will be 28 in January, a little over 3 months away. This year has already been full of things that I have never done before and I'm sure that I will do more through Dec. 31st. My old coworker Robby turned 30 this year and celebrated it by doing 30 new things by his 30th birthday. I thought that doing something like that would be fun, but I don't want to wait another 2 years to do it. I think it may be something fun to do every year up to 30. Because of this I have started making a list (it's what I do) of 28 things I want to do before I'm 28. (The year between 29 and 30 is when I want to do 30 NEW things.) Once I have completed the list and start doing things on it, I will be posting it here.

I Heart H2O!

So I have mentioned in a past post that each person has a different amount of water they need to drink each day. This is based on your weight. For example, if you weigh 140 lbs., you should drink 70 oz. per day. (Or half your weight in ounces.) I have been working on this. Some days are better than others. Some days I can’t get enough of the stuff and drink way more than my needed amount. Other days I don’t feel like I can force myself to down even half of it. I have noticed that this is most of the time effected by what I eat and drink and when I eat and drink. It’s getting easier, but I can definitely tell when my body sees the effects of it. I feel more energized (in conjunction with exercise) every day. My skin hasn’t broken out like it usually does which is really noticeable to me around that time of the month. My hair feels softer and healthier. I didn’t believe it would work, but it did. Another thing is that I don’t feel as bloated, which may have something to do with using the restroom a lot. (Upside, your body eventually gets used to your intake of water and that reduces the need to go all the time.) I really feel like I am now able to start cutting back on Coke, which is always a goal of mine. Yay for water! It tastes so refreshing and gets better everyday!

Must stay on track!

Who ever thought that I would be the type of person to wake up 2 hours before I had to leave for work just so I could exercise? Not me! Well, maybe 18 year old me that was used to it every single day for cheer, but not the me that has developed since then. Noticing that not working out wasn't working for me, I found a chance to improve myself while also proving myself wrong. This past month has been a learning experience and has allowed me to realize the benefit of focusing on myself. There may be days where I deserve not to wake right up and work out (hello, day after Timp. hike), but I have found that those other days...the ones that I am just to tired or lazy to do it....are the days that I dread. Not because I get to just relax and sleep a little more (that's something I have always cherished), but because the day is longer, I feel guilt, and I definitely don't have energy. The days I do get in my workout, even if it is 20 min. running on the elliptical or 20 min. of pilates, I am awake and alert for the rest of the day....I am more productive.....I AM HAPPIER!!!! This month has shown me that this needs to be my new way of life, where I have always felt that it was something I needed to do to get to a certain place, weight, etc. Now what I need to work on is making me stronger, physically and emotionally so that I can take on any challenges or temptations that may try to get me.....I'm talking to you Christmas cookies!

An eye for an eye.....

I need to keep this in mind. With working out in the morning and making sure that I eat my breakfast, I tend to feel like I need to eat more throughout the day. This could be my metabolism being kicked into gear, but I always fear that it is my body trying to prove Pavlov's Theory. (You know, ring a bell, get a treat.) I hope that its not the latter, but I'm struggling to believe it as I don't feel like I have lost anything. There is a fear of gaining weight that is keeping me from jumping on the scale. Something that I need to work on is weighing myself weekly, then if nothing seems to be happening, weighing myself daily. I have been able to notice more endurance since increasing my exercise. Here's to hoping that I'm doing the right things....
